Creamy Curried Egg and Avocado

In this fast-paced life, when you get up in the morning and rush off to the gym or work or to get the kids to school, it’s easy to forget to eat breakfast. Until mid morning, or later, and you’re over-hungry and you reach for the easiest thing to put into your mouth.

So easy and portable breakfasts are the key to starting off your day well. A good breakfast will ensure you get the nutrition you need to sustain you. The purpose of eating well is for quality of life – energy and vitality, not slough and struggle! And a good breakfast will help you get there.

This is one of my breakfast combos. It changes each day depending on what is available in the fridge or garden, but the hard boiled eggs are fundamental. You can prepare the eggy combo the night before or keep some eggs ready-boiled in the fridge for an easy throw together in the morning. It’s a perfect breakfast to pop into a little plastic container to transport to the gym or work.

Creamy Curried Egg and Avocado

2 hard boiled eggs, peeled and broken up with hands
Handful torn spinach leaves
Half an avocado
A few shakes of curry powder
Squeeze of lemon or drizzle of apple cider vinegar
Sprinkle of ground linseed (optional)

Place all ingredients into breakfast bowl or plastic container. Use a fork to mush ingredients together so that they’re just combined.

Devour.

Delicious.
